The wine is made from 100% Viognier grown on the Oliver's Taranga McLaren Vale property in the sub-region of Seaview. It is made using natural yeast & trial yeasts from the AWRI (Australian Wine Research Institute) that have been isolated from the wild. The wine is then barrel fermented in 1 & 2 year old French oak barriques on lees. Malolactic fermentation was not carried out. With this addition, Corrina is aiming for a very textural wine, full of dried apricot varietal aromas & full palate weight.
